Greek Salad with Zesty Lemon DressingGreek Salad

Greek Salad Ingredients: 
1 head romaine lettuce, washed, chopped and completely dried
1/2 medium red onion, sliced
1/2 red, orange or yellow bell pepper, seeded and sliced
1 cup of chopped tomatoes
1 medium cucumber, diced
1/2 cup kalamata olives (about 20 olives), sliced into thirds, optional
1 oz feta cheese, or to taste

Zesty Greek Dressing:
2 Tbsp Extra Virgin olive oil
Juice from 1 lemon, freshly squeezed (about 2 1/2 Tbsp)
1/4 tsp Salt
Pinch of Black pepper

Directions

  1. Place your chopped and dried romaine in a large salad bowl along with sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, and kalamata olives if using.
  2. Just before serving, add the dressing and sprinkle with feta. Toss the salad to combine ansauteed-english-peasd serve right away.

Sauteed English Peas With Mint

Quick-saute freshly shelled peas in a little butter until just tender; season with a dash of salt and pepper and top with freshly chopped mint. Serve with chicken or eat as a simple snack

Watermelon Blueberry Ice Pops

Hands-On Time:: 10 minutes
Total Time: 6 hours 10 minutes
Makes: 10 (3 ounce) freezer pops

Ingredients

3 3/4 cups chopped seedless watermelon

2 tablespoons lime juice

1-2 tablespoons sugar

1 cup fresh blueberries

freezer pop molds

Directions

1. Puree watermelon, lime juice and sugar to taste in a food processor or blender until smooth.

2. Divide blueberries among freezer-pop molds. Top with the watermelon mixture. Insert the sticks and freeze until completely firm, about 6 hours. Dip the molds briefly in hot water before unmolding.

*These fun treats can freeze for up to 3 weeks!
